Baked Eggs Tortilla Bowl

This breakfast is so easy but looks pretty impressive too...


You can put whatever you like in it but this combo is delicious, fresh and healthy.



Recipe:
(Serves 1)

1 gluten free wrap (I use Genius beetroot wraps)
2 eggs
6 baby plum tomatoes, halved
20g feta
2 spring onions, sliced
1/2 tsp chilli flakes
Pinch of oregano 

Preheat the oven to 180c and grease a ovenproof dish. Place the wrap in the dish and add the tomatoes and spring onions. Crack in 2 eggs and break the yolks. Sprinkle over the oregano and chilli flakes and crumble in the feta. 

Cover the edges in foil to prevent burning, and bake in the oven for 13-14 minutes until the eggs are firm. Then sprinkle over some cress to finish.
