Easy Working From Home Lunch Ideas

As a lot of us are now working at home, I thought I would share some delicious and gluten free lunches that are way more exciting alternatives to soups and sandwiches. 


All these ideas are really quick and easy to make but completely delicious and will brighten up your day.


Burrata cheese with grilled tomatoes and garlic bread

This is easy. Just take the burrata out of the fridge 20-30 minutes before so it comes to room temperature. Heat up the grill, chop the tomatoes, place them on a tray, drizzle with oil and grind over some black pepper. Slice the gluten free bread and drizzle with garlic oil. Place both under the grill until the tomatoes are cooked and the bread is toasted. Serve with the burrata and fresh basil leaves.


Cured Meat & Cheese Boards

Simply place whatever you fancy on a board and serve. This platter has different types of salami, prosciutto, strawberries, kiwis, grapes, cheddar, brie, rosemary, a hard boiled egg and a gluten free brioche roll.


Peach & Prosciutto Salad

Quarter the peaches and roast them in the oven until they are soft and caramelized. Toast the pine nuts in a dry frying pan, carefully so they don't burn. Toss together the peaches with prosciutto, rocket, toasted pine nuts and torn mozzarella and then drizzle with balsamic glaze.


Caprese Bagels

Slice the bagel in half then toast until golden. Spread both halves of the bagel with green pesto, then top with sliced cherry tomatoes, torn mozzarella and basil leaves. Finish with freshly ground black pepper.


Loaded Houmous

Spread half a pot of houmous over a plate then top with salad (sliced cucumber, halved cherry tomatoes, sliced radishes and rocket). Crumble over some feta and finish with freshly ground black pepper. Serve with toasted gluten free bread or pittas.
