Nut Free Tummy Friendly Cheesy Pesto

OK, so this makes sort of a cross between a pesto and a sauce...






It is nut free and gluten free. It has a cheesy, pestoy taste and the Emmental adds a nutty flavour. It doesn't contain any garlic, which often makes my stomach hurt. 





Recipe:
(Makes enough for 200g pasta)

50g fresh basil
30g Parmesan, finely grated
20g emmental, finely grated 
Juice and zest of 1 lemon
Salt & pepper
Drizzle of olive oil
Splash of water to loosen 


Place the basil in a food processor and whiz until fine. Add both the cheeses, lemon zest and juice and the seasoning. Whiz again until combined and then, with the motor running, pour in a drizzle of olive oil until you have a nice pesto texture.

Add a splash of water if it needs loosening and then pour over hot gluten free pasta. The cheese will melt a little on the hot pasta which will be delicious and slightly gooey. 

This sauce will last a day or so in the fridge in an airtight tub but once it has been put on warm pasta it should be eaten straight away.
