Cajun Prawn Tacos Recipe

Here is a super easy recipe for a quick mid-week supper...


If you've been reading my blog since the beginning then you probably know by now that I love tacos.


These tortillas are from MexGrocer and are made with cactus leaves making them lovely and green. But you can get gluten free tortillas from most supermarkets these days.


This is a super easy recipe that is healthy and tasty. The fiery prawns with the fresh crunchy vegetables is delicious. 



Recipe:
(Serves 4)

8 corn GF tortillas
200g raw peeled king prawns 
1 cup cooked sweetcorn
1 cup chopped crisp lettuce
1 tbsp Cajun seasoning 
Pinch of dried chilli flakes
1 tsp oregano
20g feta
Red cabbage, sliced, to serve
A few sprigs of fresh coriander
Salt & pepper
Olive oil

Heat a tablespoon of oil in a pan, add the prawns and cook on a medium heat until they turn pink (only a few minutes). Add the Cajun seasoning, chilli flakes, oregano, a pinch of salt & pepper and cook for a minute or so longer, turning constantly.

Meanwhile warm the tortillas one by one in a dry frying pan until soft and pliable.

Assemble the tacos with the lettuce, sweetcorn and red cabbage, then top with the prawns. Drizzle with a tiny bit of oil, crumble over the feta and tear over the coriander leaves, then serve.

Easy!
