Green French Toast Recipe

This is a delicious way to serve French toast...

You could add even more greens, maybe a handful of kale, for extra goodness.

(Serves 2)

30g feta
3 small eggs
60ml skimmed milk
1 heaped tsp margarine
4 slices white gluten free bread
4 tbsp green pesto 
2 handfuls spinach
1 tbsp grated parmesan
Salt & pepper
Sunflower oil, for frying 

Beat the eggs, milk, parmesan and 2 tablespoons of the pesto together in a wide bowl. Cut the bread in half (into triangles) and soak each piece in the eggy mixture for a few minutes on each side.

Heat a splash of oil and margarine in a large frying pan. Once the margarine has melted, place the soaked bread in the pan and pour over any remaining egg mixture.

Cook on a high heat for a few minutes on each side until lovely and golden. Turn down the heat and add the remaining pesto, spinach, seasoning and a tablespoon of oil to the pan and cook until the pesto has melted and spinach has wilted. Keep moving everything around the pan so it doesn't burn.

Divide between two plates and crumble over the feta.
