Sweet Potato, Black Bean & Bacon Hash (Spiralized)

This works beautifully for breakfast, lunch or dinner and is a delicious meal packed with sweet potato and bacony goodness...


 It is delicious served with a runny fried egg, but if you wanted to save on calories, a poached egg would work nicely too.





 Recipe:
(Serves 2)

2 medium sweet potatoes, peeled
6 rashers streaky bacon, chopped
2 tsp dried oregano
1 tsp paprika
1/2 cup black beans, drained and rinsed 
1 tbsp fresh parsley, chopped
2 eggs
Pinch of salt & pepper
Sunflower oil, for frying

Place a frying pan on a high heat, add the chopped bacon and fry for about 10 minutes until crisp and golden.

Meanwhile, chop the ends off the sweet potatoes, place in the spiralizer and spiralize into thin noodles.

Add the sweet potato to the frying pan with a splash of oil, the oregano, paprika and seasoning then sauté for 10 - 15 minutes or until cooked to your liking. If you overcook them they may become mushy; they are best cooked al dente. Move the noodles around the pan (using tongs) so they cook evenly.

Tip the beans in with the noodles a few minutes before the end of the cooking time so they become warmed through.

Heat a tablespoon of oil in another frying pan, crack in the eggs and cook for approximately 5 minutes until cooked through.

Divide the sweet potato hash mixture between two bowls, top each with a fried egg and serve scattered with fresh parsley.
