Pancake Burritos Recipe

Why not make something a bit different this Pancake Day...


Years ago, when I used to find it difficult tracking down good gluten free wraps, I started making these 'burritos' with my pancake recipe and they work pretty well. 



Recipe:
(Serves 3/Makes 6 small burritos)

6 gluten free pancakes, using this recipe
250g pork mince
2 tomatoes, sliced & deseeded
130g grated cheddar
1 x 200g tub guacamole
Pinch of salt
1/2 tsp paprika
1/2 tsp chilli flakes
1 tsp dried thyme
1 tbsp sunflower oil


Heat the oil in a pan, add the meat and then fry on a medium - high heat for about 10 minutes. Add the salt, paprika, chilli flakes and thyme, stir and continue cooking for another 5 minutes until browned and cooked through.

Lay out all the pancakes and divide the guacamole between them. Spread it out in a line down the centre (as pictured above) then top with a couple of tomato slices each. Divide the meat between the pancakes and then top each one with some cheese, reserving about a quarter of it.

Preheat the oven to 200c.

Fold the top and bottom of the pancakes in and over the ends of the fillings. Then fold in the sides, place folded side down on a baking tray and then top each one with the last of the cheese.

Bake in the oven for about 6 - 7 minutes until the cheese is bubbling.
