Strawberry & Basil Frozen Yoghurt (Ice Lollies)

With this beautiful summer weather, I thought it was about time I wrote up this recipe.

You can use this recipe to make normal frozen yoghurt but its much more fun and easier to eat in ice lolly moulds.


It is healthy and delicious, strawbs are the most beautiful of fruits and the pops of fragrant basil make the frozen yoghurt extra special.



Recipe:
(Makes 8-10)

150g strawberries
200g condensed milk
500g tub low fat natural yoghurt
3 large basil leaves, chopped 
 
Roughly chop half of the strawberries and whizz the rest in a food processor until pureed.
 
Transfer the puree to a bowl, then stir in the condensed milk and then the yoghurt. Gently mix in the chopped strawberries.
 
If you want to make frozen yoghurt then scrape the mixture into a loaf tin and wrap with cling film, or, for lollies divide the mixture between ice lolly moulds. Whichever way, make sure you freeze it overnight. The frozen yoghurt can be frozen for up to 1 month.
 
If you are making it in a loaf tin then you will need to remove from the freezer 10 -15 minutes before serving, but ice lollies are ready to go straight away.
 
 


 Or if you want to be really cheeky you can put it in gluten free ice cream cones!
