Simple Gluten Free Sponge Cake

This is THE simplest gluten free sponge cake recipe...

 Baking is not exactly my forte so I like really simple recipes. It doesn't produce anything spectacular, just a simple and delicious sponge cake.

You can eat it plain or decorate however you like.


250g Gluten Free Self Raising Flour Blend
100g margarine
300g caster sugar
6 tbsp skimmed milk
4 small eggs 

Place in a bowl and whisk like mad until totally smooth and creamy.

Line and grease a 7 inch cake tin and preheat the oven to 190c.

Pour the cake batter into the tin and bake for 50 - 55 minutes until a cake tester comes out clean.

Allow to cool on a wire rack and lick the bowl (optional).
