Gluten Free Cucumber Canapés & Other Nibbles





This is a super easy, super healthy way of serving gluten free canapés.

There is no need for blinis and I actually prefer these cucumber versions as they are more refreshing and much lighter. They are so simple to make, it is basically just assembly.

Our friends came over from Denmark so I tested these out on them, along with other nibbles and drinks, and they went down well.

To make the Cucumber Canapés:
Simply slice a cucumber into roughly half a centimetre thick slices. Top each one with a dollop of cream cheese and a prawn, then finish with a tiny sprig of herbs such as parsley or dill and a light seasoning of salt and pepper.

Other easy and gluten free nibbles that I served was salami, olives, crisps and some gluten free mini pizzas made using Genius Puff Pastry.
