The BLTA

The BLTA is a bacon, lettuce and tomato sandwich (BLT) with added avocado. It is THE best. Add a fried egg and it's even better.




The creaminess of the egg and avocado with salty bacon is amazing. I like to use rocket instead of lettuce for even more flavour and bagels instead of bread for their chewiness.



Recipe:
(Serves 2)

2 Gluten free bagels (Udi's), sliced in half & lightly toasted
1 handful of rocket leaves
1 avocado, sliced & tossed in lemon juice (prevents browning)
1 tomato, thinly sliced
6 rashers streaky bacon
Mayonnaise
2 eggs

Fry the bacon in a pan until it is really crisp, then remove with a slotted spatula and place on a plate.

Crack the eggs into the hot bacon fat that remains in the pan and fry for 3 - 4 minutes until cooked to your liking.

To assemble, place the bottom halves of the bagels on 2 plates and start stacking. Top each one with a small squeeze of mayonnaise, then rocket, then tomato slices, then avocado, then bacon and finally top with a fried egg each and very gently place the top halves of the bagels on top of the fried eggs.

Press down on the top to burst the egg yolk and serve straight away.
