Easy Pork Burger Recipe

As well as gluten there are several other things I can't eat, one of which is beef..



I do, however, need a meat fix every now and then so I've been making these pork burgers (or a variation of) for years.

A lot of burger recipes use eggs and/or breadcrumbs, but I don't think it is necessary. If you squeeze and knead the meat enough it becomes bound on it's own. A dash of olive oil helps. 

 You can serve these burgers with whatever kind of salad you like but the spiralized cucumber adds a fantastic fresh and crunchy element to the burgers.

 
Recipe:
(Makes 2)

250g pork mince 
1/4 small red onion, finely chopped
1 tbsp chopped fresh parsley
Pinch of dried oregano
Pinch of paprika
Pinch of chilli powder
1 tsp olive oil
Salt & pepper
Extra oil for frying 

To serve:
2 gluten free bread rolls
1/4 cucumber
Mayo
Sweet potato wedges, optional

Place all the ingredients in a bowl and mix together using your hands. Squeeze the mixture with your hands (yes it feels gross!) until the mixture becomes smooth and bound together. 

Divide into two and shape into burgers. Heat the extra oil in a frying pan then fry the burgers on a medium heat for approximately 10 minutes (5 minutes on each side) until cooked right through. 

Chop off the ends of the cucumber so both ends are flat and even and spiralize it with the ribbon blade. Press with kitchen towel to get rid of excess water.

Serve with the bread rolls, cucumber and mayo.
