Cajun Pie Recipe

This is a beautiful summer dish that is perfect for alfresco dining. 









Recipe:

1 portion of my gluten free pastry
3 medium sweet potatoes, peeled and diced
1 spring onion, finely sliced
Handful of frozen sweetcorn
4 cherry tomatoes, halved
3 - 4 tbsp grated cheddar
1 tbsp Parsley, chopped 
1 tbsp Cajun seasoning 
2 tbsp sunflower oil
Pinch of salt


Bring a pan if water to the boil and add the sweet potato. Simmer for about 10 minutes until cooked through and soft. 

Meanwhile heat 1 tbsp of the oil in a frying pan, add the spring onions. Drain the potatoes and mash. Add to the frying pan and cook for a few minutes. Allow to cool.

Preheat the oven to 200c. Then add the sweetcorn and Cajun seasoning to the pan and season with the salt. 

Press the pastry into a flan tin to make the base. Cook in the oven for 10 minutes. 

After 10 minutes, spread the sweet potato mixture over the base. 

Dot the cherry tomatoes around, pressing them into the filling. Top with the cheese and drizzle with the rest of the oil. 

Bake for another minutes until the pastry is cooked and cheese melted. 

Garnish with the parsley and allow to cool slightly before removing from the tin. Serve either warm or cold.
