Halloumi, Mango & Asparagus Salad with Avo Sauce

Halloumi is one of my favourite foods so I love any salad with it in...



 Halloumi goes so awesomely well with mango (try my Halloumi & Mango Tacos) and this salad is amazingly delicious with so many different flavours and my creamy and zingy avocado sauce.



Recipe:
(Serves 2)

225g light halloumi, sliced
80g fine asparagus, trimmed
8 cherry tomatoes, halved
60g lambs lettuce
200g mango slices (from a tin is fine)
2 limes, cut into wedges
1 handful cashew nuts
1/2 an avocado
Freshly ground black pepper
Vegetable oil, for frying

For the sauce -
1/2 an avocado
1 tbsp lemon juice
1 1/2 tbsp vegetable oil
2 tbsp greek yoghurt
Pinch of salt & pepper


Heat up a small amount of oil in a frying pan and cook the halloumi on a high heat for about 5 minutes on each side until golden.

Bring a pan of water to the boil and add asparagus. Cook for about 4 minutes or as per packet instructions until cooked through. Drain and plunge into cold water to keep it bright green and to allow it to cool quicker.

Meanwhile make the avocado sauce, whizz the avocado half, lemon juice, yoghurt and seasoning in a food processor until smooth then slowly add the oil (with the motor running).

Dice up the other half of the avocado and drizzle in a little lemon juice to stop browning.

Spread the lambs lettuce over a platter, scatter the tomatoes on top and lay over slices of mango and the asparagus spears. Add the diced avocado and halloumi then season with the black pepper. Finally scatter over the lime wedges and nuts and serve with dollops of the avocado sauce.
