Feta & Pine Nut Leafless Chop Salad

This is such a healthy lunch or a deliciously healthy side dish...

It is delicious as a side to grilled chicken. Add some potato wedges too to make a meal of it.

(Serves 2-3 as a side)

18 cherry tomatoes, quartered
1 orange pepper
1 green pepper
100g white beans, cooked
60g pine nuts
50g red cabbage, chopped
100g feta cheese
1 tbsp finely chopped parsley
1 tsp dried oregano
Freshly ground black pepper
Extra virgin olive oil

Deseed and dice the peppers into small 1cm pieces. Toss into a bowl with the tomatoes, beans and cabbage.

Toast the pine nuts in a dry frying pan for a couple of minutes until golden and add to the bowl.

Cut the feta into 1cm cubes and add to the bowl. Add the herbs, season heavily with black pepper and mix well.

Finish with a drizzling of oil.
